From searching and educating myself, to help my daughter, I discovered from many individuals that they had the same need.  There are so many people suffering and they do not know what to do.  I myself have suffered from severe food allergies of late.  So my mission changed into a mission to help all suffering from the same health issues.  Why stop at my family?  Why not help everyone?  This is how my cookbook came to be.

 

I donate my time to certain causes and help people when they are trying to go off on an allergy-free journey.  So let's start you off on your own wonderous adventure.

Ratatouille

 

Oven baked and delicious French dish.

 

Ingredients:

2 Japanese eggplant peeled sliced

1 small sweet onion sliced

2 lbs. pork medallions (can cut pork loin to make slices) or you can make chicken if you prefer poultry sliced

2 zucchinis, sliced

2 yellow squash, sliced

1 sweet pepper, sliced

3 small potatoes, sliced

1 sprig of thyme

10 fresh rosemary leaves

16 small basil leaves or 8 large ones

4 Tablespoons balsamic glaze-Colavita® (corn and GF free)

6 Tablespoons red wine-Bolla® Bardolino

½ cup of gluten-free chicken broth

2 Tablespoons olive oil

1 Tablespoon minced garlic

Instructions:

  • Preheat oven to 375°F.

  • Take all sliced meat and vegetables and alternating layers standing upon the side of each sliced item in a 10" circular baking dish till all the slices are placed.

  • Mix all liquids (balsamic, wine, chicken broth and olive oil) in a measuring cup and let sit for a few minutes.

  • On top place all the spices, then pour the liquid over the top.

  • Cover the dish and place in the oven for 50 minutes.
